4 Step White Chickpea Chili

With Stranger Things 2 live on Netflix, it’s a miracle if I get anything productive done around the house, let alone meal prepping and getting this new recipe up on the blog.
I’ve fallen deeply into the hole of the demogorgon (is that how you spell demogorgon? what even IS a demogorgon??) and won’t be returning until the whole season is finished and I’m left waiting another year and a half for season 3. Although sci-fi isn’t usually my thing, I think it’s safe to say that most of the country has fallen for these kids and their complex love lives…more complex than I had in 8th grade, that’s for sure!
Although I by no means consider myself an avid Netflix watcher, if you’re like me and love Stranger Things, here’s a list of a few other shows you might like:
Black Mirror– Super futuristic so I suppose you could call it science fiction. This series was shot in Great Britain, so the accents alone make me love the show. Each episode is a different storyline, so some episodes i loooved and others I didn’t get into at all. Worth watching if you like a show that makes you sit back and think!
The Ozarks– I’d say this one is like a Breaking Bad/Narcos hybrid. Only one season is out on Netflix, so don’t watch it too fast!
IT- Okay so this was a recently released movie and isn’t on Netflix, but I thought it was super similar to Stranger Things (Mike from ST is even in the cast of IT) and I really liked it! The movie ends a little weird, but Stranger Things is also a little …. strange.
Okay okay enough of the movie stuff. Ya’ll are here for the foods.
White Chickpea Chili with Turkey
As you can see, I did manage to take a few hours away from the TV and threw together this (really easy) one-pot soup.
I considered leaning toward calling this a wedding soup and just rolling the pieces of turkey into meatballs and adding some orzo, but I decided to keep it as healthy as possible. Maybe I’ll throw some variety into the pot in a few months and make a wedding soup!
This chili really takes no preparation at all other than chopping up veggies and throwing them all in the pot.
The key is making sure you cook down the onion and garlic in the olive oil long enough so the onions are translucent, then adding in the chunks of ground turkey (I use 92% lean, but if you buy 85% lean you’ll probably get more juice therefore a more liquid heavy soup). Feel free to play around with whatever veggies you have on hand or want to buy at the store. I purposefully stayed away from tomatoes in this recipe to keep it low sugar and as “white” as possible. In hindsight, mushrooms or white beans would’ve been great to add in too. Keep in mind: the more veggies you add to the soup, the more stock you’ll need!
I topped the soup with a handful of shredded cheddar cheese, a dollop of plain greek yogurt, and chopped cilantro. I can’t wait to pull these babies out of the fridge this week and dig in. Enjoy!
4 Step White Chickpea Chili
If there's one thing I want my soup to be, it's filling. And this 4 step white chickpea chili is most definitely that, and it tastes good too! Cuddle up while the temps drop and warm your soul with my easy to make soup that the whole family will love.
Ingredients
Chili:
- 1 tbsp olive oil
- 3 cloves garlic
- 1 yellow onion
- 1 lb lean ground turkey
- 2 cups vegetable stock
- 1 can chickpeas, rinsed and drained
- 1 zuchinni, chopped
- 1 orange pepper, chopped
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp salt and pepper, to taste
Optional Garnishes:
- 1 handful cilantro, chopped
- 1 tbsp shredded cheese, per bowl
- 1 tbsp plain greek yogurt, per bowl
Instructions

Heat olive oil in a large pot over medium high heat, add onion and garlic and cook until translucent (about 5 minutes).

Add in ground turkey, cumin, chili powder, and salt and pepper. Cook turkey until browned (5-7 minutes). Break up the meat as it cooks.

Reduce heat to medium and add in vegetable stock, pepper, zuchinni, and chickpeas.

Simmer for 15-20 minutes until the chili has thickened and the zuchinni is tender. Serve with optional garnishes (garnishes not included in nutritional information).
