Corn: The Perfect Summer Sidekick
How much fresh sweet corn can I eat this summer? The limit does not exist.
Mix it with a little feta cheese, cilantro, Live24K turmeric-collagen blend, creamy Greek yogurt, and a few other mix-ins and we’re really talking. This dish is so versatile for the type of event you’re going to.
Pool party? Easy. Bring some chips along and it instantly becomes a dip.
Family BBQ? It’s the perfect side for that seared brat on the grill.
2am and you wake up starving? Eat it cold out of the Tupperware container over the kitchen sink. Okay maybe that’s just me..
Elote Inspo
To be honest, I had never heard of “elote” until just a few years ago. Technically the terms refers to corn still on the cob or “on a stick” that is customarily seasoned with salt, chile powder, butter, cotija, lemon juice or lime juice, and mayonnaise. I was inspired by this AMAZING off the cob elote I tried in St. Louis at a little taco restaurant called Mission Taco Co. More detail on this restaurant in my St. Louis post here!
If you live in the Columbus area, Cosecha Cocina has an amazing Elote on their menu as well. (If you ask me, I prefer to order one of everything from the “Small Plates” section of their menu instead of tacos any day!).
Anyways. Back to the DIY Elote I mentioned earlier.
I added a few of my own mix-ins to this dish such as green pepper and the Live24K turmeric-collagen powder. Using regular turmeric is okay, but I totally recommend trying out the “Golden Fuel“!
The powder blend is nutritionally optimized for its anti-inflammatory and ayurvedic healing benefits. The blend is very versatile for hot/cold drinks, savory dishes as well as sweet meals. More recipes coming in the future! I came across the brand through Instagram (like pretty much anything else these days, am I right?) and I loved their message and knew I had to try this Golden Fuel to see what it was all about.
I also subbed Greek yogurt for the mayo that’s so typically found in elote dishes in order to keep it a little on the lighter side. And you know what? You can’t even tell! Healthy Summer Corn Elote

Ingredients
- 5 ears sweet corn, boiled in a large pot
- 1 cup Greek Yogurt
- 1/2 red onion, diced
- 1/2 cup cilantro, chopped
- 1 green pepper, diced
- 1/4 cup feta cheese (optional)
- 2 tsp Live 24K Golden Fuel
- salt and pepper, to taste
- lime juice, to taste
Instructions

Shuck corn and boil in a pot for 10 minutes Once the corn has been boiled and cooled, shave the corn off the cobs into a large mixing bowl.

Mix in all other ingredients (except feta and cilantro), and dump into a large cast iron skillet or other cooktop pan. Heat the ingredients on medium heat for 5 minutes, stirring every few minutes.

Once thoroughly heated, transfer to a serving dish and top with feta and cilantro. Enjoy!
