Healthy Cheesy Fries on the Grill

While the time I’ve spent outside so far this summer has been a massive let-down (thanks Ohio rain), it hasn’t stopped me from making all of my favorite summer recipes. While my meals during the wintertime tend to be a little on the heavier, more “comforty” side of things, I prefer to keep it light when I’m cooking during the warmer months. Does this mean my everyday diet strictly includes spinach, smoothies, and zuchinni noodles?? Heck no! I still love cooking my childhood favorites (especially for friends) by making just a few easy and light swaps. And that’s why I love these Healthy Cheesy Fries on the Grill! You can either put the recipe together by wrapping the fries in a foil pack or throwing them into a cast iron skillet, like I did above. And to make it a littler lighter for your family, here are my three swaps to make this fun summer classic:
Healthy Cheesy Fries – Three Light Swaps
- Swap regular potatoes for sweet potato fries. I still use the frozen kind from the grocery store, so the recipe is quick and easy. Sweet potatoes are a little lower in carb count that white potatoes, and are also loaded with potassium and vitamin B6!
- Swap butter or lard for Mazola Corn Oil. Mazola Corn Oil is an all-purpose, cholesterol free cooking oil that is a smart heart-healthy choice for your family. Variety of uses include baking, grilling, sautéing, stir frying, or mixing up a marinade or dressing. The best thing about this recipe is that it is relatively little to no mess. That’s why we always made it at camps when we were kids, right?! Throw the corn oil covered fries in the foil or your cast iron skillet, cook for 20-30 minutes, add toppings, and boom. Done. You technically don’t even need to get out plates if you’re just going straight into those foil packs with your forks. (Which is exactly what we did when I pulled this bad boy right out of the grill, lol!)

Healthy Cheesy Fries on the Grill
I've taken your summertime campfire staple and made it just a little healthier, but a classic (and no mess!) snack that your whole family will love. Who doesn't love cheesy fries?!
Ingredients
- 1 lb frozen sweet potato fries
- 2 tbsp Mazola® Corn Oil
- 1 cup shredded cheese
- 1/4 cup fresh chives
- 2 tbsp greek yogurt
- 4 slices bacon cooked and crumbled
- 1 pinch salt and pepper
Instructions

If using a grill, preheat to medium high. If using an oven, preheat to 425 degrees.

If making a foil packet, rip two large squares of heavy duty aluminum foil and divide your frozen sweet potato fries evenly between the two. Make sure your fries are spread in an even layer and not laying on top of each other. If using a cast iron skillet, spread out the fries evenly.

Drizzle Mazola corn oil over the fries. Mazola Corn Oil has a neutral taste that lets the natural flavor of your food stand out! Then, sprinkle with salt and pepper before closing the foil packs and placing on grill (or in the oven). If using a cast iron skillet, cover the skillet with a sheet of foil

Toss fries occasionally and cook through, about 20 minutes. Open foil and sprinkle with mozzarella, bacon crumbles, and chives (or cilantro).

Put the packs back in the grill/oven for 2-3 minutes (with grill lid closed if grilling) until cheese is melted. When the cheese is melted, add some Greek yogurt on top to finish!
